I am a maniacal data gatherer, and when I want to
know something I'll comb the Internet and read tons of books to find the
answers. Here is the "Cream" of barbecue information on the Net
as I've found it (IMHO).
- The most comprehensive FAQ on Barbecue, The Barbecue
FAQ of the Internet, (http://www.eaglequest.com/~bbq/faq2/toc.html),
covers the whole gambit of information and answers many of the same
questions that you are asking right now.
- Where I got my start, Barbecue'n
on the Internet, (http://www.barbecuen.com) with articles from Smoky
Hale. Here, you'll find some very spirited opinions on barbecue, with
a lot of great articles to get you started. Smoky's a bit grouchy at
times, but that just adds to his character. Great source for
Offset-Cooking information. (he doesn't like bullets too much)
- For cooking on the Weber Smoky Mountain, you
CAN'T beat Chris Allingham's Virtual
Weber Bullet (http://www.virtualweberbullet.com). This is the
website that I aspire to be. As you'll find, I won't cover much on the
WSM on my site because Chris just does such a damn good job on his.
Instead, I'll just refer you. Great for all bullet cookers, even if
you just own an ECB or kettle.
- For those of you in the
crowd with Kamado's or BGE's, AlanZ. has a great site, Kamado
Cooking (http://www.zenreich.com/ZenWeb/kamado.htm). There are
tons of recipes and illustrations that you can apply to any cooker.
Alan has a love of cooking that I can relate to, and it shows on his site.
- The best place on the Internet to hang out
and ask questions on barbecue, Ray
Basso's Kansas City BBQ Forum, (http://www.rbjb.com/rbjb/rbjbboard/index.html).
This is the place that I learned about 98% of what I know about
barbecue. You can learn from amateurs like me, and full-on
professional chefs and caterers. These folks just like to help
people and are usually good-natured and helpful. (I know some of them are
reading this, and they know what I mean about "usually".)
Just remember that all of what you read is 100% opinion most of the time, so
just make the best of it.
- Creole
and Cajun Cooking? Well, not barbecue exactly, but great recipes
for sausage, tasso, jambalaya, etc., (http://www.gumbopages.com)
- General Purpose Recipes, Arielles
Recipe Archives, (http://www.neosoft.com/recipes/). Tons of
recipes on just about everything you can imagine. Compiled from the
cooking newsgroups, I believe.
I have more, of course, but these are the
best. As I find new ones that are worth it, I'll put them up.
