Pictures of the Rib-Cook
(each link is about 75k)
Whole wood cook (Oak and Hickory, 4:1),
started with oak/hickory lump and logs.
Night before
Rib Prep (BRITU for ribs and Renowned Mr. Brown for butts)
Starting up a bed
of coals. (once burned down, it's much smaller...small, hot, flame
with transparent smoke)
Load her up, using
(2) rib racks. Notice the butts in the bottom of the upright,
been there a few hours. Also, notice the toothpick spacers (not pretty,
but they provide the air circulation for bark).
Close-up of the
Upright section.
Halftime....looking
good. Hey, some (not all) of the racks look almost done.....remember,
they're done when they're done and not by the clock (they went another
hour, total of about 4).
