2 - 8-lb pork butts
10 - racks Pork Spares (bronto ribs)
50 - Italian Sausages (not shown)
50 - Hot Dogs (not shown)
1 - Salmon Fillet (not shown)

Whole wood cook (Oak and Hickory, 4:1), started with oak/hickory lump and logs.
Night before Rib Prep (BRITU for ribs and Renowned Mr. Brown for butts)
Starting up a bed of coals. (once burned down, it's much smaller...small, hot, flame with transparent smoke)
Load her up, using (2) rib racks.  Notice the butts in the bottom of the upright, been there a few hours.  Also, notice the toothpick spacers (not pretty, but they provide the air circulation for bark).

Halftime....looking good.  Hey, some (not all) of the racks look almost done.....remember, they're done when they're done and not by the clock (they went another hour, total of about 4).
